You can either love or hate autumn, but you definitely won’t remain indifferent to it. We choose the first option and enjoy this time of cozy comfort and rich food. Inspired by this season, we have created an autumn menu called “Beef&Cake Forest Menu.”
In it, our chefs have combined the gifts of the forest and garden — fragrant chanterelle mushrooms, eryngii mushrooms, and new potatoes, seasonal asparagus, red peppers — with our main pride and joy, impeccable meat. So, we invite you on another gastronomic journey offered by our restaurant in Khmelnytskyi. We promise: it will be delicious!
Five mushroom masterpieces this fall
We chose chanterelle mushrooms as the main ingredient of our fall menu. Few people know this, but they are a real treasure of the Ukrainian forest. They appear en masse only for a short season, from September to October, when the humidity in the forest increases, which contributes to their reproduction. Therefore, only a true mushroom picker who is not afraid of the rain and cold weather will be lucky enough to “hunt” them.
Unlike other mushrooms, chanterelles have a sweet taste with delicate peppery notes. Their dense, fleshy texture holds its shape perfectly during cooking, and their bright red color complements the visual presentation of mushroom dishes. They are ideal for both light appetizers and rich main courses.

Bruschetta with chanterelles

We combined crispy ciabatta with delicate cream cheese, topped with fried chanterelles and spicy marinated bell peppers. Salty brynza cheese with fenugreek (a spicy seasoning) adds depth to the flavor.
We recommend pairing this dish with a light white wine with refreshing acidity, such as Sauvignon Blanc, or a glass of sparkling Prosecco.
Salad with chanterelles and smoked turkey sous-vide

An elegant salad in which a fresh mix of greens and cherry tomatoes meets tender smoked turkey cooked using the sous-vide technique. Chanterelles in a creamy sauce bring all the components together, and the light aroma of truffle paste transforms this salad into a real delicacy.
New potatoes with mixed mushrooms

Delicate slices of potatoes are literally bathed in a fragrant mustard and cream sauce, along with two types of mushrooms: chanterelles and eringas. Spinach adds freshness to the dish, and the cream and soy-based Hondashi sauce adds a deep umami flavor. A slight chili kick and crispy olive crumbs complete this incredible composition.
Beef Stroganoff with chanterelles and mashed potatoes

Our interpretation of a beloved classic for a hearty autumn evening. Pieces of tender veal that melt in your mouth in a thick, creamy sauce with chanterelles and gherkins. The dish is served with light mashed potatoes.
Tagliatelle with stracciatella, chanterelles, and truffles

Homemade pasta in a creamy sauce with spinach, two types of mushrooms, delicate stracciatella, and the intoxicating aroma of truffle oil. The creaminess of the dish and the aroma of truffles harmoniously combine with barrel-aged Chardonnay or elegant Pinot Blanc.

The mushroom menu is temporary, as the season for fresh chanterelles in Ukraine is coming to an end. These mushroom dishes will only be available until the end of October.
